Comfort food the not so unhealthy way.
I am addicted to cheese and ground beef, because you can do so much with them. Tho every dish tastes and looks different. Ground beef never gets boring.
So this time, instead of making the standard “I mix ground beef with noodles” casserole, I wanted to have one with rice. Oh and lots of cheese.
For things like that I always use low-fat cheese and the ground beef with the lowest fat amount possible.
I like to eat a lot, but still don’t wanna gain weight. This dish is perfect for it. I promise you, it won’t leave you unsatisfied!

 It’s that time of year again–Eastover.  When Easter and Passover overlap, and when you’re a “Cashew” like me,  it can lead to a week of interesting meals.  It started with a Seder with friends on Tuesday in which we made Matz’mores for dessert (those are matzoh s’mores in case you were wondering), and now to honor my other half, I had to try making something that’s always been at the Eastover table in my family.  Deviled Eggs.  The original version is not so good for you, but I made a healthier version that’s just as tasty.

Quesadillas are versatile and oh so very easy. If you don’t have time to prepare a salad or just need something on the fly, you can turn to this recipe. Loaded with flavor and healthy vegetables, it’s fairly low calorie, but still satisfying and delicious.
